VEGETARIAN BLACK BEAN CHILI (Gluten Free, Vegetarian and Vegan!)

Ingredients 

  • 1 medium onion, diced.
  • 2 tablespoons minced garlic.
  • 3 tablespoons olive oil.
  • 15 ounce can black beans.
  • 15 ounce can tomato sauce.
  • 2 teaspoons ground cumin.
  • 1/2 teaspoon ground cayenne pepper.
  • 1 teaspoon chili powder.
  • Sea salt and ground black pepper to taste.

Directions

  1. Sautee onions and garlic in oil until onions turn clear, about 5 minutes.
  2. Carefully add tomato sauce and black beans and reduce the heat to medium low.
  3. Add spices and stir to combine well.
  4. Cover and allow to simmer at least 20 minutes, stirring occasionally.
