CJ’s BAKED GREEK CASSEROLE

Ingredients

  • 1 cup red onion, chopped.
  • 1 cup green bell pepper, chopped.
  • 2 – large zucchini, sliced thin.
  • 1/2 cup black olive pieces.
  • 1 cup feta cheese, chopped.
  • 1 pound penne pasta.
  • 1 – 15 ounce can diced tomatoes.
  • 1/2 teaspoon dried rosemary.
  • 1/2 teaspoon ground black pepper.
  • 1 teaspoon capers, finely chopped.
  • sea salt to taste.
  • 1 tablespoon olive oil.
  • 2 tablespoons Greek vinaigrette dressing.

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In sauce pan, boil penne pasta to “al dente”, drain.
  3. Drain liquid from diced tomatoes, then add tomatoes to pasta.
  4. Drizzle olive oil on bottom of 9×13 baking dish.
  5. Spoon penne pasta and tomato mixture into baking dish.
  6. Layer the zucchini, onion, pepper, capers and olives over top of pasta mixture.
  7. Sprinkle with feta cheese, and drizzle with vinaigrette.
  8. Cover baking dish with aluminum foil.
  9. Bake in preheated oven until vegetables are tender (about 30 minutes).
  10. Remove foil, turn the oven onto Broil (low), and broil until the feta lightly browns.
