CJ’s MEDITERRANEAN STEW

A very tasty and healthy dish, perfect for vegetarians.  Slow cook this in your crock pot, then pour over rice or noodles for a fabulous and easy dinner that’s sure to please.

Ingredients

  • 1 – eggplant, chopped.
  • 2 – zucchini, chopped.
  • 1 – green pepper, chopped.
  • 1 – red pepper, chopped.
  • 1 – yellow pepper, chopped.
  • 1 – medium yellow onion, chopped.
  • 3 – tomatoes, chopped.
  • 30 ounces garbanzo beans, drained, rinsed.
  • 9 ounces artichokes, frozen, quartered.
  • 1 teaspoon fresh oregano.
  • 2 teaspoons ground black pepper.
  • 1 teaspoon sea salt.
  • 2 teaspoons red pepper flakes.
  • 1 dozen Greek olives.
  • 1 cup water.

Directions

  1. Combine all ingredients in a crock pot (low setting) and cook until zucchini is tender.

*8 servings.

** Great over rice or noodles.
