CJ’s VEGETARIAN STACKER
Looking for a lite dinner? Here’s a winner! Filling and satisfying but not full of calories, cholesterol or fat.
Ingredients:
- 3 – large tomatoes.
- 2 – bunches fresh asparagus, chopped.
- 1 – package sliced fresh mushrooms.
- 1 – package of whole mozzarella cheese.
- Balsamic vinegar.
- Grated parmesan cheese.
- Ground black pepper.
- Olive Oil.
Directions:
- Slice tomatoes into thick slices.
- Steam asparagus on stove top (3-5 minutes).
- Slice whole mozzarella cheese into thick slices.
- Saute mushrooms in olive oil.
Assembly:
- Begin stacking by placing a thick sliced tomato at bottom of a bowl.
- Add a slice of mozzarella.
- Add a few sautee’d mushrooms.
- Spoon some pieces of steamed asparagus.
- Repeat to form a double stack.
- Spoon more asparagus around the stack and add additional slices of mozzarella around the edge.
- Sprinkle balsamic vinegar over the complete stack.
- Shake ground black pepper & grated parmesan cheese over the top.
